What is a Kumquat?!

This review is based on batch 7. I had never had kumquat anything prior to this Kumquat hot sauce. I like oranges, lemons, and limes, so I should like Kumquats. I really enjoy this sauce. There is a very nice citruscy flavor that is the star of the show with this. Not a ton of heat, but it is definitely there. Carrots and Kumquat?!? Yes, carrots are listed on the ingredient list and definitely smooth out the citrusy/vinegary notes. A difference between this sauce and other sauces I have had from HI Spice is that it has a much thicker viscosity. I have not tried, but think this would be a great sauce to baste over shrimp on the grill. The way I have been enjoying it is with chicken and fish tacos!
